Super Simple Sunday Pancakes

The best Sundays start with pancakes. I freaking love pancakes. I mean seriously...I'm a little obsessed!! When I started eating more cleanly (re: less sugar, gluten, processed food), I was distraught to discover that most pancakes are full of sugar, gluten and are generally very processed! After a few months of grieving and wallowing, I plugged "healthy pancakes" into Google. Oh brave new world!! THEY EXIST!!!! I had a very Disney-esque moment - seriously, I'm pretty sure a bunch of fluffy animals and birds appeared from nowhere and did a song-and-dance sequence with me! So, without further ado, here is my Super Simple Sunday Pancakes recipe:   Ingredients: 1.5 cups of oats 1 cup milk (I used coconut milk) 2 eggs Sprinkle of cinnamon Dash of vanilla   Method: Place all ingredients into a blender.
